Ingredients
1 pound ground mild Italian sausage
½ medium yellow onion, diced (approximately ½ cup)
1 can (28 ounces) diced tomatoes
2 tablespoons tomato paste
3 cups (720 g) chicken broth
2 teaspoons garlic, minced
2 teaspoons Italian seasoning
1 teaspoon kosher salt
½ teaspoon black pepper
1 bag (20 ounces) fresh cheese tortellini, refrigerated
1 cup (238 g) heavy cream
2 cups fresh spinach
Parmesan cheese, shaved, for garnish
Instructions
In a large heavy-bottomed pot over medium heat, add the Italian sausage. Cook for about 8-10 minutes, breaking up the meat, until no longer pink. Drain excess grease.
Add diced onions to the pot and cook until translucent, about 3-5 minutes.
Add tomatoes, tomato paste, chicken broth, garlic, Italian seasoning, salt, and pepper. Stir to combine and bring to a simmer.
Add tortellini, heavy cream, and spinach. Stir and allow to simmer until the tortellini is tender and the spinach is wilted, about 8-10 minutes.
Serve garnished with shaved Parmesan cheese.
