Slow Cooker Beef Curry Recipe
Ingredients:
2 lbs beef chuck, cut into cubes
2 tablespoons curry powder
1 teaspoon turmeric powder
1 tablespoon paprika
1 tablespoon ground cumin
1 teaspoon ground coriander
1 onion, chopped
4 cloves garlic, minced
2 tablespoons fresh ginger, minced
1-2 red chili peppers, chopped (optional, adjust to spice level)
1 can (400ml) coconut milk
1 can (400g) diced tomatoes
1 tablespoon tomato paste
1 tablespoon soy sauce
2 tablespoons fish sauce
1 tablespoon brown sugar
2-3 cups beef broth (enough to cover beef)
Salt and pepper to taste
Fresh cilantro for garnish
Cooked rice, for serving
Instructions:
In a large pan, brown the beef cubes over medium-high heat until they are seared on all sides. Remove from the pan and set aside.
In the same pan, sauté the onions, garlic, and ginger until softened and fragrant.
Add the curry powder, turmeric, paprika, cumin, and ground coriander. Stir for about 1 minute to toast the spices.
Transfer the seared beef and spiced onion mixture to a slow cooker.
Add the coconut milk, diced tomatoes, tomato paste, soy sauce, fish sauce, brown sugar, and chili peppers (if using).
Pour enough beef broth to cover the beef, season with salt and pepper.
Stir everything together, then cook on low for 6-8 hours or high for 4-5 hours, until the beef is tender.
Adjust seasoning if necessary before serving.
Garnish with fresh cilantro and serve with rice.
Notes:
Adjust the number of chili peppers based on your spice tolerance.
The longer it cooks, the more tender the beef becomes.
