Ingredients
16-20 sea scallops (jumbo scallops)
¼ teaspoon each of salt & pepper
¼ teaspoon paprika
½ cup plain Panko breadcrumbs
â…“ cup grated Parmesan cheese, plus some reserved for topping
2 tablespoons chopped parsley
4 tablespoons melted unsalted butter
2 tablespoons extra virgin olive oil
Optional: 2 tablespoons melted butter for the baking dish, â…› teaspoon chipotle chili powder, fresh lemon zest
Instructions
Preheat your oven to 400°F (205°C). Optionally, coat the bottom of your baking dish with 2 tablespoons of melted butter.
Pat the scallops dry with paper towels and remove any tough side muscle.
In a mixing bowl, combine the salt, pepper, paprika, chipotle chili powder (if using), Panko breadcrumbs, Parmesan cheese, parsley, melted butter, olive oil, and lemon zest (if using). Stir until well mixed.
Place the scallops in a single layer in the baking dish and evenly top with the breadcrumb mixture. Sprinkle with the reserved Parmesan cheese.
Bake for 15-18 minutes, or until the topping is golden brown and the scallops are cooked through
